Q: Can the switch work in both these ways: 1) one power source toggles between two outputs; 2) one output toggles between two power sources?

They are double pole double throw. So the source can be two different Circuits. Also The center terminal is made to an end terminal depending on which way it is switched . You can control 4 loads with this switch. So yes to your question.

Q: OK for trolling motor ?

The switches are rated at 16 amps if your trolling motor draws less than 16 amps ( check nameplate) then the switch will work just fine

Q: Can it be used to reverse polarity for 120V electric motors?

Our shop has polarity reversal switch, which is expected to be put on shelves in early September. The quality is excellent, please look forward to it!

Q: I need a rubber boot cover for this switch, will a gardner bender gsw-20 fit? the rubber boot for this switch is no longer available.

I switched out one of mine with a “standard” boot from another brand with no issue. Thread seems to be standard. But some boots are for short goggles and others longer - check that.
